Rosemary chicken fingers on bruschetta
A special recipe for me..... Ingredients
- 2/3 cup mayonnaise
- 2 tablespoon sour cream
- 1 tablespoon chopped fresh parsley
- 2 teaspoons grated fresh lemon rind
- 4 chicken breasts
- 1/4 cup olive oil
- 1 tablespoon chopped fresh rosemary
- 1 stick french bread,cut into thick diagonal slices
- fresh rosemary sprig to garnish
Directions
- 1.To make the lemon mayonnaise ,combine the first 4 ingredients.
- Mix well and set aside.
- 2.Trim the chicken of any excess of fat or sinew and cut into long thin strips.Place in a bowl with half of oil,rosemary,salt and pepper:toss well.
- 3.Heat a cast-iron grill plate or heavy based frying pan until smoking hot,then brush lightly with a little oil.Cook the chicken,searing until golden brown and just tender.Set aside.
- 4.Toast the bread and brush with the remaining oil.To serve,place on each bruschetta a few strips of chicken,and drizzle over lemon mayonnaise.Garnish with the rosemary sprigs.
