    Rosemary chicken fingers on bruschetta

    Ingredients

    • 2/3 cup mayonnaise
    • 2 tablespoon sour cream
    • 1 tablespoon chopped fresh parsley
    • 2 teaspoons grated fresh lemon rind
    • 4 chicken breasts
    • 1/4 cup olive oil
    • 1 tablespoon chopped fresh rosemary
    • 1 stick french bread,cut into thick diagonal slices
    • fresh rosemary sprig to garnish

    Directions

    1. 1.To make the lemon mayonnaise ,combine the first 4 ingredients.
    2. Mix well and set aside.
    3. 2.Trim the chicken of any excess of fat or sinew and cut into long thin strips.Place in a bowl with half of oil,rosemary,salt and pepper:toss well.
    4. 3.Heat a cast-iron grill plate or heavy based frying pan until smoking hot,then brush lightly with a little oil.Cook the chicken,searing until golden brown and just tender.Set aside.
    5. 4.Toast the bread and brush with the remaining oil.To serve,place on each bruschetta a few strips of chicken,and drizzle over lemon mayonnaise.Garnish with the rosemary sprigs.
