Rosemary and Thyme Roast Spuds

- 8 large desiree potatoes, peeled, cut into thick wedges
- 1/3 cup macadamia oil
- 1/4 cup fresh rosemary leaves
- 1 tablespoon fresh thyme leaves
Directions
- Preheat oven to 200°C/180°C fan-forced. Place potato in a large roasting pan. Add oil, rosemary, thyme and salt and pepper. Toss to coat. Roast, turning occasionally, for 40 to 45 minutes or until golden and crisp. Serve.
