Roasted Fresh Tomatoes
Ingredients
- 6 large ripe tomatoes (about 3 lbs.), room temperature
- 2 TBSP oil
- 1/2 tsp crushed basil leaves
- 1/4 tsp thyme leaves
- 1/4 tsp salt
- 1/4 tsp black pepper
Directions
- Preheat oven to 425F
- Core tomatoes; cut in half horizontally.
- Gently squeeze halves to remove seeds.
- Place tomato halves, cut side up, on rack in broiler pan.
- Combine oil, basil, thyme, salt and pepper in a small bowl; mix well.
- Brush oil mixture over cut sides of tomatoes.
- Turn tomatoes cut side down.
- Bake until well browned, about 30 minutes.
- Remove skins if desired.
