Roast Leg Of Lamb With Spicy Wine Sauce
Ingredients
- 1 c. dry red wine
- 1/4 c. vegetable oil
- 2 x garlic cloves chopped
- 1 x onion coarsely minced
- 1 1/2 tsp Tabasco brand Green Pepper Sauce
- Salt to taste
- 1 x leg of lamb
- Parsley
Directions
- Combine wine, oil, garlic, onion, Tabasco brand Green Pepper Sauce and salt in small bowl. Place lamb in shallow glass, ceramic or possibly plastic dish. Pour marinade over lamb. Cover and chill 6 hrs or possibly overnight, turning occasionally.
- Preheat oven to 325 degrees.
- Place lamb on rack in shallow roasting pan. Roast (slowly) 30 min per lb. or possibly till meat thermometer registers 175 degrees for medium doneness. Baste occasionally with marinade. Garnish with parsley.
- This recipe yields 6 to 8 servings.
