River Market And Deli's White Chili
Ingredients
- 2 lb Navy beans, soaked
- 3 med Yellow onions, diced
- 1 sm (no. 3) can green chillies,
- Diced
- 1 Tbsp. Garlic, minced
- 1/3 c. Cumin
- 1/3 c. Cilantro, minced
- 2 Tbsp. Oregano, minced
- 1/2 tsp Cayenne
- 1 tsp Cloves, minced
- 3/4 gal Chicken stock
- 12 ounce Monterey Jack Cheese,
- Shredded
- 24 ounce Sor cream
- 2 lb Chicken, diced
- 1/3 c. Extra virgin olive oil
Directions
- Wash beans. Cover water 3 inches over the beans and soak over night. Wash chicken. Bake till done. Don't overcook. Cold and dice. Heat oil.
- Saute/fry onions, chillies and garlic till translucent/soft. Add in spices. Add in beans and chicken stock and cook till beans are soft, about 2 to 3 hrs.
- Add in cheese, stirring continuously. Add in lowfat sour cream, stirring constantly.
- Add in chicken.
