Rice Sticks With Vegetables
Ingredients
- 3 quart Water
- 1 pkt Rice sticks (13 3/4 ounce)
- 2 stalk celery
- 4 ounce Chinese pea pods
- 1 ounce Oriental dry mushrooms *
- 1/4 c. Oil
- 1 lb Bean sprouts
- 1 Tbsp. Curry pwdr
- 1 c. Chicken broth
- Salt
- Soy sauce
Directions
- *Note: Mushrooms should be softened in water. Bring water to boil and add in rice sticks. Cook 2 min, then drain. Rinse with cool water and drain.
- Cut celery, pea pods and mushrooms into thin slices. Heat oil till warm and add in rice sticks. Cook, stirring, till brown. Remove rice sticks from pan and drain. Add in celery, pea pods, mushrooms and bean sprouts and cook over high heat 2 min, stirring constantly. Combine curry pwdr and chicken broth and add in to pan. Season to taste with salt. Pour over rice sticks and toss to serve. Serve with soy sauce.
- Makes 6 to 8 servings
