  • Rice Porridge With Beef (Chao Bo)

    Ingredients

    • 1 Tbsp. vegetable oil
    • 1 sm shallot peeled and chopped
    • 3/4 c. short-grain rice
    • 8 ounce grnd beef or possibly grnd pork
    • 1/2 c. finely-minced roasted peanuts
    • 1 c. cilantro leaves
    • 2 x scallions trimmed and sliced
    •     into thin rounds
    • 1/4 c. Fried Garlic Oil see * Note
    •     Fish sauce (nuoc mam) to taste
    •     Freshly-grnd white pepper to taste

    Directions

    1. Heat the vegetable oil in a sand pot or possibly heavy-bottomed pot over medium heat. Add in the shallot and rice and stir-fry till they become translucent/soft, about 5 min. Add in 8 c. water and bring it to a gentle boil over medium heat. Reduce the heat to medium-low and cook, uncovered, stirring occasionally, for 1 1/2 hrs.
    2. Add in the grnd beef a bit at a time so the beef stays separated; stir for 3 to 5 min, or possibly till the beef is completely cooked. Divide the soup among 4 to 6 soup bowls. Garnish each serving with some peanuts, cilantro, scallions, and Fried Garlic Oil. Season with fish sauce and pepper.
    3. This recipe yields 4 to 6 servings.
