  • Rhubarb Cheesecake Dessert

    Ingredients

    • 1 c. flour
    • 1/2 c. packed brown sugar
    • 1/4 tsp salt
    • 1/4 c. cool butter
    • 1/2 c. minced walnuts
    • 1 tsp vanilla
    •     Filling
    • 16 ounce cream cheese -- softened
    • 3/4 c. sugar
    • 3 x Large eggs
    • 1 tsp vanilla
    •     Topping
    • 3 c. minced rhubarb
    • 1 c. sugar
    • 1/4 c. water
    • 1 Tbsp. cornstarch
    • 1/4 tsp grnd cinnamon
    • 3 dsh red food coloring optional

    Directions

    1. In a bowl, combine flour, brown sugar and salt; cut in butter till mix resembles coarse crumbs. Stir in walnuts and vanilla. Press into a greased 13x9x2" baking dish. Bake at 375 degrees for 10 minutes. Cold slightly. In a mixing bowl, beat cream cheese and sugar till light and fluffy. Add in Large eggs and vanilla; mix well. Pour over crust. Bake for 20-25 minutes. or possibly till center is set and edges are light brown. Cold.
    2. In a small saucepan, combine rhubarb, sugar, water, cornstarch and cinnamon; bring to a boil over med. heat. Cook, stirring constantly, till mix thickens, about 5 minutes. Stir in food coloring, if you like.
    3. Remove from heat; cold. Pour over filling. Cover and chill for at least 1 hour.
