Rhubarb Cheesecake Dessert
Ingredients
- 1 c. flour
- 1/2 c. packed brown sugar
- 1/4 tsp salt
- 1/4 c. cool butter
- 1/2 c. minced walnuts
- 1 tsp vanilla
- Filling
- 16 ounce cream cheese -- softened
- 3/4 c. sugar
- 3 x Large eggs
- 1 tsp vanilla
- Topping
- 3 c. minced rhubarb
- 1 c. sugar
- 1/4 c. water
- 1 Tbsp. cornstarch
- 1/4 tsp grnd cinnamon
- 3 dsh red food coloring optional
Directions
- In a bowl, combine flour, brown sugar and salt; cut in butter till mix resembles coarse crumbs. Stir in walnuts and vanilla. Press into a greased 13x9x2" baking dish. Bake at 375 degrees for 10 minutes. Cold slightly. In a mixing bowl, beat cream cheese and sugar till light and fluffy. Add in Large eggs and vanilla; mix well. Pour over crust. Bake for 20-25 minutes. or possibly till center is set and edges are light brown. Cold.
- In a small saucepan, combine rhubarb, sugar, water, cornstarch and cinnamon; bring to a boil over med. heat. Cook, stirring constantly, till mix thickens, about 5 minutes. Stir in food coloring, if you like.
- Remove from heat; cold. Pour over filling. Cover and chill for at least 1 hour.
