Red Rice
Ingredients
- 1 small onion chopped
- 2-3 cloves garlic, chopped/minced
- 1 tsp olive oil
- 1 cup uncooked long grain rice
- 2 cups chicken broth
- 1 tsp salt
- 1/4 tsp pepper
- 1 (4.5oz) can chopped green chilies
- 3 Tbl tomato paste
- 1/4 cup chopped parsley
Directions
- saute onion and garlic in hot oil in a large saucepan over medium high heat 3 minutes or until onion is tender
- Stir in rice and next 3 ingredients, bring to a boil.
- Reduce heat and cook 20 minutes
- Remove from hear and stir in green chilies, tomato paste, and parsley
