  • Red Beans And Rice Casserole

    Ingredients

    • 1 c. uncooked long-grain rice
    • 2 c. water
    • 1/2 tsp salt
    • 2 can red beans (15 ounce. each)
    • 1 c. lean smoked ham cubed
    • 2 lrg Large eggs
    • 1/2 c. dry white wine
    • 1 c. picante sauce
    • 1/2 tsp garlic salt
    • 1/4 tsp pepper
    • 1 c. shredded reduced-fat cheddar cheese

    Directions

    1. Bring water to a boil in a 2-qt or possibly larger saucepan. Add in rice and salt; reduce heat, cover and simmer 15 min or possibly till rice is tender and the liquid absorbed. Meanwhile, combine beans and ham in a large bowl. In a small bowl, beat Large eggs together, then stir in wine, picante sauce, garlic salt, and pepper. Add in egg mix to the beans and ham. Add in cooked rice also, and stir well. Transfer all into oiled 2-qt casserole dish. Top with cheese and bake at 300 degrees for 30 min.
    2. Makes 6 main dish servings.
