  • Red Beans and Rice cajun style

    I got this recipe from my long time High School friend although I adapted it just a bit. Bean generally say to soak overnight in water but i just found that if you just use really warm or hot tap water they soften a lot faster 2-4 hours and recently learned that adding 2 tbsp of baking soda to soak water reduces the gas that beans generally give you. Make sure to rinse really good when beans are done soaking.

    Ingredients

    • 2 cups Kidney or small red beans
    • 2 cup Rice
    • 2 pkg smoked sausage
    • 2 clove garlic minced
    • 1 medium onion diced
    • 2 stalks celery finely chopped or diced
    • 1/4 tsp of black pepper, white pepper, red pepper
    • 1 tbsp garlic powder and onion powder
    • 1 bell pepper any color
    • 2 tbsp parsley
    • Cajun season to taste (optional)
    • Water

    Directions

    1. Rinse beans thoroughly.
    2. Cut sausage in slices then in half again
    3. In a Large pot add all ingredients except rice with enough water to cover beans. boil for about 3-4 hours until beans are tender.
    4. in a separate pot add 2 cups water or chicken broth for every cup of rice bring to a boil reduce heat and let simmer until all water is absorbed.
    5. Serve Beans over rice.
    6. Don't forget the cornbread!!
