  • Raspberry Balsamic Glazed Chicken

    Ingredients

    • 1 tsp vegetable oil
    •     cooking spray
    • 1/2 c. red onion minced
    • 1/2 tsp dry thyme
    • 1/2 tsp salt divided
    • 4 x skinless boneless chicken breast halves
    • 1/3 c. seedless raspberry preserves
    • 2 Tbsp. balsamic vinegar
    • 1/4 tsp pepper

    Directions

    1. Heat oil in non-stick skillet coated with cooking spray over medium high heat till warm.
    2. Add in onion and saute/fry 5 min.
    3. Combine thyme and 1/4 tsp salt; sprinkle over chicken.
    4. Add in chicken to skillet and saute/fry 6 min on each side or possibly till done.
    5. Remove chicken from skillet and keep hot.
    6. Reduce heat to medium-low.
    7. Add in 1/4 tsp salt, preserves, vinegar, and pepper, stirring constantly till the preserves heat.
    8. Spoon sauce over chicken.
    9. Description: "The balsamic vinegar works... magic with the raspberry preserves..."
