Raspberry Balsamic Glazed Chicken
Ingredients
- 1 tsp vegetable oil
- cooking spray
- 1/2 c. red onion minced
- 1/2 tsp dry thyme
- 1/2 tsp salt divided
- 4 x skinless boneless chicken breast halves
- 1/3 c. seedless raspberry preserves
- 2 Tbsp. balsamic vinegar
- 1/4 tsp pepper
Directions
- Heat oil in non-stick skillet coated with cooking spray over medium high heat till warm.
- Add in onion and saute/fry 5 min.
- Combine thyme and 1/4 tsp salt; sprinkle over chicken.
- Add in chicken to skillet and saute/fry 6 min on each side or possibly till done.
- Remove chicken from skillet and keep hot.
- Reduce heat to medium-low.
- Add in 1/4 tsp salt, preserves, vinegar, and pepper, stirring constantly till the preserves heat.
- Spoon sauce over chicken.
