  • Raspberry and Blueberry Raw Vegan Cupcakes

    I couldn’t live without fruits! Really! In my opinion fruits are a gift from Heaven! Every time I eat a fruit I thank God for that wonderful gift. I don’t know if it’s that sweet taste that makes me so crazy about them, or that lovely juicy texture, but one thing I do know for sure is that fruits make me happy. As I told you yesterday, I made some delicious blueberry and raspberry raw cupcakes! They were great and so easy to make! The actual preparation took me about 10 minutes. I hope you will try this recipe!

    Ingredients

    • ⅓ cup walnuts, soaked for at least 2 hours
    • 10 dehydrated plums
    • ⅓ cup dehydrated cranberries – soaked for at least 2 hours
    • ½ cup cashews – soaked for at least 2 hours
    • 3-4 tbs blueberries
    • 3 raspberries

    Directions

    1. Add the walnuts, plums and cranberries in your food processor. Puree until you get a thick, sticky paste. Divide the paste in three equal portions and put them in your cupcakes forms, pressing gently to cover the whole inside surface of each form.
    2. Add the cashews and blueberries in your food processor. Puree until you get a smooth, thick consistency. Divide the mixture in three and add it in the cupcakes forms.
    3. Garnish with raspberries.
    4. Put them in your freezer for about an hour, then move them in your fridge or eat them!
