    Use this easy prep salsa for Huevos Rancheros, tortilla dishes, meatloaf, etc. I have never seen this particular type of sauce in the grocery store for some reason, so always make it.

    Ingredients

    • 1 tbs. corn oil
    • 1/4 cup each finely chopped bell pepper, celery and onion
    • 1 tsp ground cumin
    • 1 tsp garlic powder
    • 1/2 tsp.dry oregano
    • 1 1/2 tbs. cornstarch
    • 1 can rotel (get mild, if you are not a big fan of jalapenos)
    • 2 cups chicken broth
    • salt and pepper to taste
    • optional: cilantro leaves

    Directions

    1. Saute the veggies in the oil, add the rest of the ingredients, except for the cornstarch, bring to a boil.
    2. Make a paste with the cornstarch and a bit of water, add to sauce.
    3. Turn down to simmer 5 minutes.
