Ranch Style Eggs

- 2 cups cooked pinto beans
- 1 cup chunky salsa
- 6 eggs
- 1/2 cup fresh cilantro, finely chopped
- 1/2 cup shredded pepper jack cheese
- salt & pepper to taste
Directions
- Soft-scramble the eggs in a hot lightly greased skillet.
- Add beans and salsa and continue cooking until eggs are fully cooked.
- Stir in cilantro, turn off heat, and allow to sit for 1 minute.
- Top with shredded cheese.
- Add salt & pepper to taste.
