QUINOA BLACK BEAN BURGERS COATED WITH PANCO
These vegetarian burgers are made with black beans and quinoa are delicious! Ingredients
- 1 (15 OUNCE) CAN BLACK BEANS, RINSED AND DRAINED OR 1 CUP COOKED BLACK BEANS, FROZED AND THAWED.
- 1/4 CUP QUINOA (OR FROZEN QUINOA, THAWED)
- 1/2 CUP WATER (No need for water when using frozen quinoa)
- 1 CUP BREAD CRUMBS
- 1/4 CUP MINCED GREEN OR YELLOW BELL PEPPER
- 2 TABLESPOONS MINCED ONION
- 1 LARGE CLOVE GARLIC, MINCED
- 1 1/2 TEASPOONS GROUND CUMIN
- 1/2 TEASPOON SALT
- 2 TEASPOONS WINN DIXIE SWEET CHILI SAUCE
- 2 EGGS
- 3 TABLESPOONS OLIVE OIL FOR SKILLET
Directions
- IF USING UNCOOKED QUINOA FROM BAG, BRING THE QUINOA AND WATER TO A BOIL IN A SAUCEPAN. REDUCE HEAT TO MEDIUM-LOW, COVER, AND SIMMER UNTIL THE QUINOA IS TENDER AND THE WATER HAS BEEN ABSORBED, ABOUT 15 TO 20 MINUTES.
- PUT THE FOLLOWING INGREDIENTS IN THE NINJA BOWL TO MIX: BLACK BEANS, QUINOA, BREAD CRUMBS, BELL PEPPER, ONION, GARLIC, CUMIN, SALT, SWEET CHILI SAUCE OR HOT PEPPER SAUCE IF DESIRED, AND EGGS.
- USING AN ICE CREAM SCOOP, FORM MIXTURE INTO PATTIES, APPROXIMATELY SIX AND COAT WITH PANCO.
- HEAT OLIVE OIL IN A LARGE SKILLET.
- COOK THE PATTIES IN THE HOT OIL UNTIL BROWN, APPROXIMATELY 2 - 3 MINUTES PER SIDE.
