  • QUINOA BLACK BEAN BURGERS COATED WITH PANCO

    These vegetarian burgers are made with black beans and quinoa are delicious!

    Ingredients

    • 1 (15 OUNCE) CAN BLACK BEANS, RINSED AND DRAINED OR 1 CUP COOKED BLACK BEANS, FROZED AND THAWED.
    • 1/4 CUP QUINOA (OR FROZEN QUINOA, THAWED)
    • 1/2 CUP WATER (No need for water when using frozen quinoa)
    • 1 CUP BREAD CRUMBS
    • 1/4 CUP MINCED GREEN OR YELLOW BELL PEPPER
    • 2 TABLESPOONS MINCED ONION
    • 1 LARGE CLOVE GARLIC, MINCED
    • 1 1/2 TEASPOONS GROUND CUMIN
    • 1/2 TEASPOON SALT
    • 2 TEASPOONS WINN DIXIE SWEET CHILI SAUCE
    • 2 EGGS
    • 3 TABLESPOONS OLIVE OIL FOR SKILLET

    Directions

    1. IF USING UNCOOKED QUINOA FROM BAG, BRING THE QUINOA AND WATER TO A BOIL IN A SAUCEPAN. REDUCE HEAT TO MEDIUM-LOW, COVER, AND SIMMER UNTIL THE QUINOA IS TENDER AND THE WATER HAS BEEN ABSORBED, ABOUT 15 TO 20 MINUTES.
    2. PUT THE FOLLOWING INGREDIENTS IN THE NINJA BOWL TO MIX: BLACK BEANS, QUINOA, BREAD CRUMBS, BELL PEPPER, ONION, GARLIC, CUMIN, SALT, SWEET CHILI SAUCE OR HOT PEPPER SAUCE IF DESIRED, AND EGGS.
    3. USING AN ICE CREAM SCOOP, FORM MIXTURE INTO PATTIES, APPROXIMATELY SIX AND COAT WITH PANCO.
    4. HEAT OLIVE OIL IN A LARGE SKILLET.
    5. COOK THE PATTIES IN THE HOT OIL UNTIL BROWN, APPROXIMATELY 2 - 3 MINUTES PER SIDE.
