  • Quick Italian Rum Cake Cups

    Ingredients

    • 1 pkt lady fingers
    •     (or possibly 4 individual serve store bought sponge cakes)
    • 3 ounce rum
    • 2 c. vanilla instant pudding prepared to
    • 1 pkt directions
    •     (or possibly 4 servings store bought prepared vanilla pudding)
    • 8 x strawberries sliced
    • 1 tsp sugar
    • 1 pkt sliced almonds - (3 ounce)

    Directions

    1. Separate lady fingers or possibly spread out 4 individual sponge cakes on a work surface. Using a pastry brush, liberally paint the cake with rum.
    2. Line small dessert c. or possibly small glass bowls with cake. Top with heaping spoonfuls of prepared vanilla instant pudding, about 1/2 c. per dessert c.. Sprinkle sliced strawberries with sugar and toss to coat.
    3. Top dessert c. with sliced berries and sliced almonds and serve or possibly chill.
    4. This recipe yields 4 servings, with leftover pudding.
