Quick Curry Soup
This very quick and tast very good! 2 pkg frozen veggies. I use a pack of red, green peppers with onions, and another package with carrots, snowpeas, mushrooms, etc. 4 red potatoes, 1 large onion. Water, handful of spinach or baby kale, curry powder and himalyan salt to taste. Chicken broth or vegetable broth works well too! I figure that there is about or under 1 cup of the vegetables put under ingredients in a package of frozen veggies. or you could use the measures given. Ingredients
- 1 red pepper
- 1 green pepper
- 1 cup carrots slice
- 1 cup onions chopped
- 1 cup mushrooms
- 1 cup snow peas
- 4 medium red potatoes
- 2 cups baby spinach or kale
- 1 qt chicken broth
- 1 tsp curry powder
- 1/2 to 1 tsp salt
Directions
- 2 pkgs of your favorite veggies such as mentioned. 4 medium red potatoes washed and cut in slices. I usually half the potatoes and then slice them. 1 large onion chopped. A handful of washed baby spinach or baby kale. 1 teaspoon of curry powder and himalayon salt 1/2 to 1 tsp...less.... Cover with water and cook till done.
