    Quick Chicken Divan is a delicious, easy and quick (1 Hour) recipe for an Italian-style weeknight meal. Chicken breasts, broccoli, leeks, chicken broth mayonnaise and Dijon mustard are the main ingredients. Simmered and browned then oven baked.     Ingredients

    • Non-stick cooking spray
    • (1-1/2 lbs) boneless, skinless, chicken breasts
    • 1 tbsp extra-virgin olive oil
    • 2 cups diced leek, white and light green parts only,
    • (wash well before dicing)
    • 1/2 tsp salt
    • 5 tbsp all-purpose flour
    • 1 (14 oz) can reduced-sodium chicken broth
    • 1 cup 2% milk
    • 2 tbsp dry sherry
    • 1/2 tsp dried thyme
    • 1/2 tsp freshly ground black pepper
    • 2 (10 oz) boxes frozen chopped broccoli, thawed
    • 1 cup grated Parmesan cheese, divided
    • 1/4 cup low-fat mayonnaise
    • 2 tsp Dijon mustard

    Directions

    1. Preheat oven to 375°F.
    2. Place chicken in a medium size skillet or saucepan; add water to cover. Bring to a simmer over high heat. Cover, reduce heat to low, simmer gently until the chicken is cooked through and no longer pink in center (10 to 12 minutes). Drain and cut into bite-size pieces.
    3. Heat olive oil in a large non-stick skillet over medium-high heat. Add in the leek and salt; cook, stirring often until softened but not browned (3 to 4 minutes). Add in the flour; stir to coat. Add in broth, milk, sherry, thyme and black pepper; bring to a simmer, stirring constantly. Add in the broccoli; return to a simmer. Remove from heat and stir in the mayonnaise mustard and 1/2 cup of the Parmesan.
    4. Spread half the broccoli mixture into the prepared baking dish. Top with the chicken, then the remaining broccoli mixture. Sprinkle evenly with the remaining 1/2 cup Parmesan. Bake until bubbly (20 to 25 minutes). Let cool 10 minutes before serving.
