  • Quadruple Chocolate Cheescake

    One of the best cheesecakes you will ever eat. This is a chocolate swirl cheesecake with chocolate chips, chocolate sour cream frosting on a chocolate wafer crust

    Ingredients

    • 2 cups chocolate wafer crumbs
    • 5 Tablespoons melted butter
    • 3 8oz packages 1/3rd fat cream cheese at room temperature
    • 1 cup granulated sugar
    • 5 large eggs - at room temperature
    • 12 oz semi-sweet chocolate chips divided into 4 of 2oz, 2oz, 2oz and 6oz
    • 1/2 cup sour cream

    Directions

    1. Prepare the crust. In medium bowl mix together chocolate wafers and melted butter until well blended. Press into a 9-inch springform pan.
    2. Preheat oven to 300 Fahrenheit
    3. In a large bowl beat together cream cheese, sugar and eggs until smooth an fluffy. spoon half of the mixture into the pan
    4. Sprinkle 2oz of chocolate chips into pan on top of cream cheese mixture
    5. In a double boiler melt 2oz chocolate chips and then stir melted chocolate into the remainder of the cream cheese mixture until well blended. Drizzle over batter in pan to make swirls
    6. Sprinkle 2oz of chocolate chips into pan on top of cream cheese mixture
    7. Bake cheesecake for 60 minutes. Remove from oven and let cool completely
    8. Transfer cake to a serving plate, cover and chill for 2 hours
    9. To prepare frosting, melt remaining 6oz chocolate chips in a double boiler. Stir in sour cream and mix until well blended. Spread over cheesecake. Chill briefly until frosting is set
