    A Healthy Fall Spin on Pancakes...reminds me of Little Debbie Oatmeal Creame Pie....of course, way healthier...low calorie, High Protein Clean Version!

    Ingredients

    • 2 Egg Whites
    • 1/4 Cup Organic Oats
    • 1/4 cup Organic Canned Pumpkin
    • 1 tsp Baking Powder
    • 2 tsp cinnamon
    • 1 tsp Pumpkin Pie Spice
    • 1 tsp Vanilla Extract
    • 1 tsp Cinnamon
    • For Yogurt Spread:
    • 1/4 cup Greek Yogurt 0%- or your preference
    • 1tsp Nutmeg
    • 2 tsp Pumpkin Pie Spice
    • 1 tsp Nutmeg
    • 1 packet Stevia in the Raw
    • Top With:
    • 1 TBS diced Walnuts
    • Lightly Drizzled Sugar-Free Syrup

    Directions

    1. Heat Griddle/Skillet Med/High Heat
    2. Lightly Spray Pan
    3. Mix all ingredients together, except for yogurt spread
    4. Pour onto hot skillet, to form 2 small pancakes
    5. May need to use spoon to flatten mixture, since it is thicker than normal pancakes, allow bottom to cook 30sec before flattening
    6. Cook on each side, flip..around 2 mins
    7. In small bowl mix together greek yogurt and spices
    8. Spread on top of one pancake, top with other
    9. Top with diced walnuts
    10. 1 serving is 2 small pancakes with yogurt spread
