    These yummy pumpkin craisin muffins taste like fall!

    Ingredients

    • 2 1/2 cups all-purpose flour
    • 1 1/2 cups sugar shopping list
    • 1 tablespoon pumpkin pie spice
    • 1 teaspoon cinnamon
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 2 eggs, lightly beaten
    • 1 ½ cups canned pumpkin
    • ½ cup applesauce
    • 1/4 cup vegetable oil
    • 1 cup craisins (or raisins)

    Directions

    1. In a large bowl, combine first seven ingredients.
    2. In a separate bowl, combine eggs, pumpkin, applesauce, and oil.
    3. Stir into dry ingredients just until moistened. Fold in craisins.
    4. Fill 24 paper-lined muffin cups three-fourths full.
    5. Bake at 350 degrees F for 20-25 minutes or until muffins test done.
    6. Cool in pan 10 minutes before removing to a wire rack.
