    Pumpkin Bread better than the box

    A couple of years ago I started my own Thanksgiving tradition of having pumpkin bread with the feast. Previous years I would buy the box of mix at my local grocery store and stock up on it as they only carry it this time of year. Well this year i forgot to grab it, I browsed the internet for recipes being very skeptic that it would be as moist and flavorful as the box stuff. Needless to say ' not buying the box again'!!!

    Ingredients

    • 3 1/2 cup all purpose flour
    • 2 cups granulated sugar
    • 1 cup brown sugar
    • 2 teaspoons baking soda
    • 2 teaspoon ground cinnamon
    • 1 1/4 teaspoon salt
    • 1 1/2 teaspoon baking powder
    • 1 teaspoon ground nutmeg
    • 1 teaspoon ground cloves
    • 1/2 teaspoon all spice
    • 1/2 teaspoon ground ginger
    • 4 large eggs
    • 1- 15 oz. Canned pumpkin
    • 2 sticks butter
    • 2/3 cup pineapple or apple juice

    Directions

    1. Preheat oven to 350. In a large bowl mix dry ingredients until well combined. In a small bowl lightly beat eggs. With a whisk add eggs, water and oil to dry ingredients mix until well combined. Coat 2 loaf pans with cooking spray, you can line them with foil or parchment paper. Fill each pan half way as it will definitely rise and over flow if too full. Bake at 350 for 65- 75 minutes or until knife in center comes out clean. Let cool about 10-20 minutes. Slice at 1/2-3/4 inch slices. Store in ziploc bags or freeze for later use.
