Puerto Rican Green Plantain Soup (Sopa De Platanos Verdes
Ingredients
- 2 x green plantains - (to 3)
- 4 Tbsp. lard
- 6 c. beef stock
- Salt to taste
- Freshly-grnd white pepper to taste
- Grated parmesan cheese for garnish
Directions
- Peel the plantains and cut into 1/2-inch slices. Soak them in cool, salted water for 20 min. Drain and pat dry.
- In a heavy frying pan, saute/fry the plantains in lard till they are tender, about 15 min. The pcs will be gold colored and will brown a little. Drain well on paper towels, then crush with a pestle or possibly mallet till they break into bits.
- Heat the beef stock in a large saucepan and add in the plantain. Simmer for 15 min, adjust seasoning, then ladle into bowls. Garnish with generous handfuls of grated parmesan.
- Comments: Simple but exotic - deceptively substantial as a first course; serve warm to 6 people, follow with grilled meat and juicy tropical fruits.
