  • Potato salad

    I have tried lots of recipes online for potato salad and none came close to really tasting good to me. This one I kind of made up from four different recipes and I think it is awesome. I am going to serve it with BBQ chicken and my mom's baked beans in just about an hour.

    Ingredients

    • 6-7 Med potatoes cut chunky
    • 2 tbsp white vinegar
    • 1/2 cup onion diced
    • 1/2 cup celery diced
    • 4 eggs hard boiled and diced
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    • 3 tbsp dill relish
    • 3 tbsp sweet relish
    • 1 tbsp garlic minced
    • 1 tbsp parsley
    • 1 tbsp cilantro
    • 1 tbsp lemon juice
    • 1 cup kraft mayo with olive oil
    • 1 tbsp spicy brown mustard
    • 2 tbsp yellow mustard
    • sprinkle of paprika on top

    Directions

    1. boil eggs in saucepan until hard boiled about 25 mins
    2. peel and cut up potatoes
    3. place potatoes in a large pot; boil potatoes in water until tender
    4. while these are cooking, in a large bowl mix all remaining ingredients
    5. except for paprika.mix thoroughly.
    6. when eggs are done, separate yolk and egg white
    7. set yolk aside, cut up egg white small
    8. cut egg yolks in half and make into crumbs
    9. add to mixture
    10. when potatoes are tender; strain them
    11. then add them to the mixture
    12. mix thoroughly
    13. sprinkle paprika on top and refridgerate for 30 mins to 1 hour
    14. before serving.
