Potato Candy
This candy was made at Chirstmas by one of my favorite aunts... I looked forward to going to her house during the holidays because I knew I was going to be able to have some of this wonderful concoction!!! The key to the recipe is to use a small amout of potato...Instant pototos can be substituted for a baked potato. Enjoy!!! Ingredients
- 2 tablespoons of a baked potato
- 1 Box Powdered sugar (sifted)
- Pinch of salt
- Peanut Butter
Directions
- Cream the potato and salt together slowly add the powdered sugar until a dough forms.
- Roll dough out to 1/8 inch thick...(I roll the dough out on top of waxed paper to help in the roll up step)
- spread with peanut butter
- Roll up in a jelly roll fashion
- Store in a cool place until firm
- Slice in thin slices
- Store in a cool place and keep covered with foil
