Potato Basil Fritatta
I love this recipe. It is easy and delicious and pretty fool-proof. I usually make it the night before so that all I need to do is bake it in the morning. Ingredients
- 8 T unsalted butter
- 2 C peeled and diced potatoes (I use the frozen variety)
- 8 extra-large eggs
- 15 ounces ricotta cheese
- 1/4 pd. Gruyere cheese, grated
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3/4 C chopped fresh basil
- 1/3 C flour
- 3/4 teaspoon baking powder
Directions
- Heat oven to 350 degrees.
- Melt 3 tablespoons butter in a pan over med-high heat. Add potatoes and fry till browned. Melt the remaining butter in a small dish.
- Whisk eggs and stir in cheeses, butter, salt, pepper and basil. Sprinkle in the flour and baking powder to incorporate.
- Place the browned potatoes into a pan and add the egg mixture on top. (I usually top with plastic wrap and place it in the fridge for the next day's breakfast).
- Bake the fritatta until it is browned and puffed (about 50 minutes to 1 hour).
- Serve hot or room temperature
