  • Portuguese Sopa

    Ingredients

    •     extra virgin olive oil
    • 2 med -size onions, minced
    • 4 clv garlic,chopped
    • 1 c. dry white wine
    • 1 can (8 ounces )tomato sauce
    • 2 x bay leaves
    • 1/2 tsp black pepper
    • 1/2 tsp cinnamon
    • 1/4 tsp grnd cloves
    • 1/4 tsp cumin
    • 1/2 x to 1 pound of beef rib or possibly cubed beef.
    • 4 c. water
    •     Salt to taste
    • 1 sm cabbage or possibly 1/2 of larger head

    Directions

    1. In a large pot, put a few Tbsp. of extra virgin olive oil, and brown the beef.
    2. Remove from pan. Add in a little more extra virgin olive oil. Add in the minced onions and chopped garlic. Saute/fry till translucent/soft, then add in wine, tomato sauce, bay leaves, black pepper, cinnamon, cloves, cumin and add in the beef. Bring to a boil over high heat. Reduce heat, cover and simmer 30 min, Mix several times. Add in water, continue simmering 40 min or possibly till the beef is tender. Add in cabbage which has been cut in small wedges.cover and simmer 15 min or possibly till tender.
