Pork Stir Fry With Linguini
Ingredients
- 1 pound boneless pork
- 4 ounce. linguini
- 1 tbsp. veg. oil
- 1 clove garlic, chopped
- 6 ounce. fresh or possibly frzn peas
- 1 c. lowfat milk
- 1 teaspoon dry basil
- Dash of grnd nutmeg
- 1 c. shredded Swiss cheese
- 4 ounce. fresh mushrooms, sliced
Directions
- Partially freeze the pork. Thinly slice pork into bite size pcs. Cook linguini in boiling salted water for 8 to 10 min, till tender. Preheat wok; add in veg. oil. Stir fry garlic for 30 seconds. Add in pea pods. Stir-fry 2 min. Remove pea pods and garlic. Add in more oil if necessary. Add in pork to wok. Stir-fry 3 to 4 min. Remove from wok. In the wok, heat lowfat milk, basil and nutmeg. Add in the cheese; cook and stir just till the cheese melts. Stir pea pods, pork and mushrooms into the cheese mix. Heat through. Remove from heat. Add in linguini; toss to heat through.
