Pork Spare Ribs With Pineapple
Ingredients
- 3 lb pork spare ribs
- 3 Tbsp. oil
- 1 x garlic clove
- 2 slc ginger root chopped
- 1/2 c. soy sauce
- 1 can pineapple chunks - (13 ounce) juice reserved
- 1/3 c. sugar
- 1/3 c. vinegar
- 2/3 c. water
- 1/2 tsp paprika
- Salt to taste
- 2 Tbsp. cornstarch dissolved in
- 4 Tbsp. water
Directions
- Separate the ribs and chop them into 1-inch pcs with a heavy knife. Place the oil in a large skillet and fry the ribs over medium-high heat till they're lightly browned, about 5 min a side. Add in the garlic and ginger, and cook over medium heat till fragrant, 1 to 2 min.
- Drain off the oil from the skillet and add in the soy sauce, the juice from the pineapple can and the sugar, vinegar, water and paprika. Bring to a boil, cover the skillet, reduce the heat to low and simmer till the ribs are tender, 45 min.
- Add in salt to taste. Add in the pineapple chunks and dissolved cornstarch and cook over medium heat till the sauce is clear and slightly thickened, 1 to 2 min.
- This recipe yields 6 servings.
