  • Pork Spare Ribs With Pineapple

    Ingredients

    • 3 lb pork spare ribs
    • 3 Tbsp. oil
    • 1 x garlic clove
    • 2 slc ginger root chopped
    • 1/2 c. soy sauce
    • 1 can pineapple chunks - (13 ounce) juice reserved
    • 1/3 c. sugar
    • 1/3 c. vinegar
    • 2/3 c. water
    • 1/2 tsp paprika
    •     Salt to taste
    • 2 Tbsp. cornstarch dissolved in
    • 4 Tbsp. water

    Directions

    1. Separate the ribs and chop them into 1-inch pcs with a heavy knife. Place the oil in a large skillet and fry the ribs over medium-high heat till they're lightly browned, about 5 min a side. Add in the garlic and ginger, and cook over medium heat till fragrant, 1 to 2 min.
    2. Drain off the oil from the skillet and add in the soy sauce, the juice from the pineapple can and the sugar, vinegar, water and paprika. Bring to a boil, cover the skillet, reduce the heat to low and simmer till the ribs are tender, 45 min.
    3. Add in salt to taste. Add in the pineapple chunks and dissolved cornstarch and cook over medium heat till the sauce is clear and slightly thickened, 1 to 2 min.
    4. This recipe yields 6 servings.
