Pork Pata Kare-Kare

- 1 kl Pork pata or Ox tripe
- 1 kare-kare mix stew based
- 3 cloves garlic
- 1 medium onion
- 1 big red tomato
- string beans, cut 2inch long
- eggplant, cut into 4 (halved-lengthwise)
- pechay tagalog
- young puso ng saging, cut into lengthwise, halved
- patis (fish sauce -optional)
- bagoong *spicy if desired
Directions
- Boil pork pata or ox tail until tender (use pressure cooker -optional)
- Reduce broth.
- Add garlic, onion, tomatoes and let it simmer.
- Add the kare-kare mix when tomatoes are already cooked.
- Add the vegetables.
- Bring to a boil until vegetables are cooked.
- Pour in a little fish saude if desired.
- Serve with bagoong.
