  • Pork Chops with Balsamic Vinegar

    A different take on a recipe from Rachel Ray's Balsamic Chicken. This is quick, easy, and I usually have the basics in the cupboard. For an even quicker week night dinner, cook the chops the night before and refrigerator. When you get home, start with sautéing onions. To save more time, cook a large pot of rice ahead of time and warm in the microwave while chops simmer. Chicken or Pork Chops - this dish is always a hit.

    Ingredients

    • Pork Chops (4-6, boneless if possible)
    • Salt and Pepper to taste
    • Non-stick cooking spray
    • One medium onion, chopped
    • One clove of garlic minced
    • One cup of chicken stock
    • One 14.5 oz can of diced tomatoes
    • 1/4 cup of balsamic vinegar

    Directions

    1. Coat a large skillet with cooking spray.
    2. Sprinkle Pork Chops with salt and pepper and brown chops.
    3. Remove chops to a plate.
    4. Add onions to the skillet and cook until tender (may need a bit of olive oil of the chops do not produce any fat).
    5. Add the garlic and cook for one minute.
    6. Stir in chicken stock, tomatoes, and vinegar
    7. Return chops, and any juices, to the skillet and simmer for 15-20 minutes.
    8. Serve with brown rice and a green vegetable.
