  • pork bacon and black eyed peas salad wrap and dressing

    Ingredients

    • 1 lb black eyed peas (cooked and drained)
    • 5 lbs pork bacon
    • 1 cup sliced spanish onions
    • 1 cup diced canned red peppers
    • 1 cup sliced canned black olives
    • dry oregano
    • 1/2 fresh chopped parsley
    • salt and pepper to taste
    • 20 lbs lettuce leaves
    • 5 lbs sliced tomatoes
    • 20 garlice herb wraps
    • 1 cup red wine vinegar
    • 2 cups olive oil
    • 1/4 cup whole and peeled garlic
    • 1/4 cup dijon mustard
    • 1/4 cup sugar

    Directions

    1. Combine peas, onions, red peppers, olives, oregano, and parsley in a large bowl.
    2. For dresssing; add all ingredients into small bowl. Whisk ingredients together using a wire whip for about one minute.
    3. Season with salt and pepper, the spoon over salad. Place garlic herb wrap on work surfacce, spread 3 ozs of bean and bacon mixture on bottom half or wrap, add 3 sliced of pork bacon, top with lettuce leaves, sliced tomato, and proceed to roll wrap from the bottom half to the top.
    4. Seal the wrap the slice in half on the bias.
