Porcupine Meatballs
Ingredients
- 1 1/2 c. Minute Rice
- 1 1/2 lbs. hamburger
- 1 sm. onion
- 2 Large eggs
- 1/4 c. lowfat milk
- 1 1/2 teaspoon chili pwdr
- Salt, garlic pwdr & pepper to taste
- 1 can tomato soup
- 1 soup can water
Directions
- Mix rice, hamburger, onion, Large eggs, lowfat milk, chili pwdr, salt, garlic pwdr and pepper. Form into 1 1/2" balls. Put into 2 qt baking dish and cover with mix of tomato soup and water. Cover and bake at 250 degrees for 2 1/2 to 3 hrs. You may add in more soup and water if you like.
- Serves 6.
