Poor Man's Caviar
Ingredients
- 1 x Eggplant
- 1 Tbsp. Vegetable oil
- 1 sm Onion, minced
- 1 x Garlic clove, chopped
- 1/4 c. Green bell peppers, minced
- 1 1/2 Tbsp. Lemon juice
- 1/2 c. Fresh parsley, minced
- 1/8 tsp Pepper
Directions
- Put whole eggplant under broiler. Cook, turning once, till skin turns brown and the eggplant is soft to the touch. Cold, cut in half, and scoop out pulp. Mash with a fork. Saute/fry onion and garlic in oil. Mix with eggplant and stir in remaining ingredients.
- NOTES : Tasty right away but if you can leave it overnight it tastes even better.
