  • Pollo In Squazet Con Polenta Alla Griglia (Grilled Polenta With Chicken Squazet)

    Ingredients

    • 1 lrg onion chopped
    • 2 slc bacon chopped
    • 3 x bay leaves
    • 1 tsp fresh rosemary
    •     (or possibly 1/2 tspn dry rosemary)
    • 4 whl cloves
    • 1/4 c. extra virgin olive oil
    • 1 x chicken - (abt 3 lbs) cut into 8 pcs
    •     Salt to taste
    •     Freshly-grnd black pepper to taste
    • 1 Tbsp. tomato paste plus
    • 1 tsp tomato paste
    • 1 c. dry white wine
    • 1 1/2 c. chicken stock
    •     Grilled Polenta for serving (see recipe)

    Directions

    1. In a large non-reactive skillet, saute/fry the first five ingredients in the extra virgin olive oil about 5 min, till the onion has wilted.
    2. Season the chicken with salt and pepper to taste, add in it to the skillet and saute/fry till lightly browned on all sides, about 5 min. Add in the tomato paste and the wine, mixing with a wooden spoon, and coat the chicken pcs with the mix. Add in the stock to the skillet, scraping the bottom of the pan to loosen the particles of food, and simmer 20 min, turning the chicken occasionally.
    3. Remove and set aside the chicken pcs and continue to cook the sauce till thickened, about 10 min. Strain the sauce, return the chicken and sauce to the pan, and cook just till heated through. Serve with Grilled Polenta.
    4. This recipe yields 4 servings.
