  • Polish Cheese Paska

    Ingredients

    • 2 lb Pressed dry farmers cheese
    • 20 x Large eggs
    • 1 c. Lukewarm water
    • 2 lrg Yeast cakes
    • 2 c. Sugar
    • 12 x To 17 c. flour
    • 1 quart Scalded lowfat milk
    • 2 Tbsp. Salt
    • 2 c. Raisins
    • 1 c. Butter, melted

    Directions

    1. Cream the cheese with hands till smooth. Add in 10 Large eggs and mix well.
    2. Dissolve 1 yeast cake in 1/2 c. lukewarm water and add in to the mix. Add in 1 c. flour and blend well.
    3. Cover and let stand overnight.
    4. Next day: beat remaining Large eggs in large bowl and add in to cheese mix. Add in sugar, salt and other yeast cake which has been dissolved in 1/2 c. hot water and blend thoroughly with hands. Add in 12 c. flour and work till smooth. Add in flour as necessry to use the 17 c.. Knead for about 30 minutes. or possibly till smooth. Spread cooled melted butter over dough and knead for about 10 minutes. Add in raisins and knead till blended, cover and let rise about 2 hrs. Punch down and let rise again till doubled. Divide dough in 8 portions. Shape loaves using a little flour for handling. Place in greased round 1-1/2 qt casserole. Let rise till double. Bake at 350 degrees for 1 hour, after 30 minutes. cover with foil to prevent burning. This is a church recipie
