    Plum tomatoes roasted with fresh basil

    When plum tomatoes are on sale this summer, grab a bagful and make this simple and delicious side dish. It goes great with just about anything you will cook on the grill--steak, lamb, chicken or fish. Or just have it as part of a vegetarian meal. However you serve it, you and your guests will love it!

    Ingredients

    • 12 plum (roma) tomatoes
    • 1/4 cup virgin olive oil
    • 1 1/2 Tbsp balsamic vinegar
    • 2 large garlic cloves, minced
    • 2 tsp sugar
    • 1 1/2 tsp kosher salt
    • 1/2 tsp fresh ground pepper
    • 12 large basil leaves, sliced

    Directions

    1. Preheat oven to 450 F.
    2. Cut tomatoes in half lengthwise, remove the seeds, and arrange on sheet pan cut side up. Drizzle with olive oil and balsamic vinegar. Cover evenly with garlic, sugar, salt and pepper.
    3. Roast for 25-30 minutes, until slightly caramelized. Sprinkle the basil over and serve warm or at room temperature.
