Piri Piri Chicken Risotto with baby spinach and Tomato's
nice spicy and flavoured risotto Ingredients
- 500 gm of diced chicken
- olive oil
- 1 punnet of cherry tomatos
- baby spinach leaves
- juice from 1 or 2 lemons (about 50 ml)
- piri piri spices to taste
- 2 cups of rice
- 2 - 3 cups of water
- 2 cups od grated cheese
Directions
- Cook chicken with olive oil and piri piri spices in the same large saucepan you intend on preparing the risotto in
- Once the chicken is cooked add lemon juice, tomatos, water and rice and cook for 12-15 minutes whilst stirring until water is pretty much evaporated and rice is cooked.
- At the 10 minute mark add the baby spinach leaves and grated cheese and continue stirring for 3 - 5 minutes until cooked
