  • Pinnacle Peak Beans (Arizona Style)

    Ingredients

    • 1 pound pinto or possibly pink dry beans
    • 8 c. water
    • 1 pound salt pork, cut in pcs or possibly 2 ham hocks or possibly 6 slices bacon, cut in pcs
    • 1 lg. onion, minced
    • 6 beef bouillon cubes
    • 1/2 c. boiling water
    • 1/2 teaspoon crushed oregano

    Directions

    1. Sort and wash beans, rinse then add in water; let stand overnight. Cook in same water they have been soaked in. Add in meat of your choice. Add in bouillon, bring to a boil, then lower to simmer immediately. Check water during simmering. When done, add in salt (1 to 2 tsp.) and oregano to taste.
