Pink Potato Salad
Ingredients
- 6-8 medium potatoes, boiled
- 1 red onion, diced
- 1/4 c. dill pickle relish
- 2 boiled Large eggs (if you like)
- 3/4 c. Hellman's mayonnaise
- 1/2 c. Catalina dressing
Directions
- Several hrs before serving, boil potatoes in salted water till fork tender. Drain and cold slightly, then peel and slice.
- Pour Catalina dressing over hot potato slices coating slices well. Allow to marinate in the refrigerator till cool. Add in onion, pickle relish, boiled Large eggs and mayonnaise. Mix well and serve.
- Note: Don't use "salad dressing" in this recipe.
