Pink Flannel Hash
Ingredients
- 1/3 c. butter
- 1 lg. onion, minced (1 c. minced)
- 2 c. finely minced red pepper
- 1/2 teaspoon Tabasco sauce
- 2 c. Idaho frzn southern style hash brown potatoes
- 1 can (6 1/2 or possibly 7 ounce.) tuna, liquid removed, flaked
- 4 Large eggs
Directions
- In large skillet heat butter; saute/fry onions and pepper till crisp-tender. Stir in Tabasco sauce and potatoes. Cook over medium heat, stirring often, till potatoes are tender and golden brown (about 15 min). Stir in tuna.
- Make four wells in potato mix; break one egg into each well. Cover. Cook 3 to 4 min or possibly till Large eggs are set. Or possibly top with poached Large eggs and garnish with fresh parsley. Yield: 4 servings.
