  • Pineapple Upside Down Cake

    Ingredients

    • 1/2 c. Butter or possibly margarine
    • 1 1/2 c. Brown sugar
    • 1 can Sliced pineapple (20 ounce), liquid removed well, save juice
    • 6 x Maraschino cherries, cut in half
    • 1/3 c. Walnut halves
    • 1 pkt Yellow cake mix
    • 1 c. Pineapple juice (from can pineapple)
    • 3 x Egg

    Directions

    1. Place half the butter in a 9 inch glass pie dish. Microwave at high (100%)
    2. till melted, 20 to 30 seconds. Sprinkle half the brown sugar over the butter. Arrange half the pineapple slices over brown sugar. Place a cherry in the center of each slice. Place walnuts. in between slices of pineapple.
    3. Repeat with second 9 inch dish. In a mixing bowl, combine cake mix, Large eggs and pineapple juice. Beat at high speed 2 min, and 1 minute at low speed. Pour over pineapple arrangement. Place one layer on an inverted saucer in the microwave oven. Microwave at medium high (70%) 8 min.
    4. Microwave at high (100%) till wooden pick inserted comes out clean, 3 to 4 min. Let stand 5 min. Invert onto serving plate. Repeat with second layer.
