    Pineapple Raisin Grapenuts Bread

    This "bread" is more like a dessert. It's an easy quick bread. It's dense, moist and cake like. It's great for breakfast, an after school snack and even dessert. The recipe calls for 1 cup of packed brown sugar which can be replaced with Splenda brown sugar. I like to make it in a pie plate and serve it in small wedges but it is a loaf bread. If you make it in a 9x5 loaf pan increase baking time to 40-50 mins. using a toothpick to test.

    Ingredients

    • 1 cup Grapenuts cereal
    • 1 cup of raisins
    • 1 8oz can Pineapple tidbits (or chunks cut in half) reserve 2-3 tbsp of juice, drain the rest
    • 1 cup of milk
    • 1 cup of brown sugar (or Splenda brown sugar)
    • 1 cup of flour
    • 1 1/2 tsp baking powder
    • 3/4 tsp salt

    Directions

    1. In a medium bowl combine Grapenuts, raisins, drained pineapple, 2-3 tbsps of pineapple juice, milk and brown sugar.
    2. Stir till well mixed and soak for 45mins to soften cereal.
    3. Preheat oven 350
    4. Spray a loaf pan or deep dish pie pan with cooking spray.
    5. Combine flour, baking powder and salt.
    6. Stir into the cereal mixture till well combined.
    7. Pour into pie plate or loaf pan and smooth batter out.
    8. Bake 25-35 mins in pie plate. Bake 40-50 mins in loaf pan.
    9. Let cool 10 mins and remove from loaf pan. If using pie plate you can leave it in there to cool and serve.
