Pineapple Raisin Grapenuts Bread
This "bread" is more like a dessert. It's an easy quick bread. It's dense, moist and cake like. It's great for breakfast, an after school snack and even dessert. The recipe calls for 1 cup of packed brown sugar which can be replaced with Splenda brown sugar. I like to make it in a pie plate and serve it in small wedges but it is a loaf bread. If you make it in a 9x5 loaf pan increase baking time to 40-50 mins. using a toothpick to test. Ingredients
- 1 cup Grapenuts cereal
- 1 cup of raisins
- 1 8oz can Pineapple tidbits (or chunks cut in half) reserve 2-3 tbsp of juice, drain the rest
- 1 cup of milk
- 1 cup of brown sugar (or Splenda brown sugar)
- 1 cup of flour
- 1 1/2 tsp baking powder
- 3/4 tsp salt
Directions
- In a medium bowl combine Grapenuts, raisins, drained pineapple, 2-3 tbsps of pineapple juice, milk and brown sugar.
- Stir till well mixed and soak for 45mins to soften cereal.
- Preheat oven 350
- Spray a loaf pan or deep dish pie pan with cooking spray.
- Combine flour, baking powder and salt.
- Stir into the cereal mixture till well combined.
- Pour into pie plate or loaf pan and smooth batter out.
- Bake 25-35 mins in pie plate. Bake 40-50 mins in loaf pan.
- Let cool 10 mins and remove from loaf pan. If using pie plate you can leave it in there to cool and serve.
