Pinakbet
One of the most liked vegetable dish in the country. Ingredients
- 1 bunch string beans (cut about 2 inches each)
- 8 pcs okra (cut in half)
- 1 large eggplant (sliced)
- 1 medium ampalaya (seeded and sliced)
- 1/4 kilo squash (chopped in cubes)
- 2 ripe tomatoes (diced)
- 1 onion (diced)
- 3 cloves garlic (diced)
- 4 tsp bagoong (shrimp paste)
- 2 tbsp cooking oil
- 1 cup meat broth
Directions
- Heat oil in pan.
- Saute onions, garlic and tomatoes.
- Add the shrimp paste, stir for a few minutes. then add the meat broth and bring into a boil.
- Add the kalabasa and okra, cook for 2 minutes.
- Add the string beans and ampalaya. Cover and simmer for 3 minutes.
- Season if needed.
- Add the Eggplant and cover, cook for another 3-5 minutes, or until the vegetables are tender to your liking.
- Serve in plate.
- Optional toppings with your favorite meat: fried pork, shrimp, or chicken.
