    Phyllo Peach Pecan Cobbler for a Large Group

    Ingredients

    • 1 box frozen phyllo dough, thawed
    • 12-15 juicy, ripe peaches, peeled, and sliced, reserving juices
    • 2 cups sugar
    • 1/4 cup brown sugar
    • 3 tbs. flour
    • 1/4 cup toasted pecan pieces
    • 1/4 cup fresh lemon juice
    • 1/2 tsp. cinnamon
    • pinch of nutmeg
    • 1/2 cup butter, divided
    • 1/2 tsp. vanilla extract

    Directions

    1. In a large saucepot, melt 3 tbs. butter, stir in flour.
    2. Add peaches with juices and the rest of the ingredients.
    3. Simmer uncovered for 10 minutes.
    4. In the meantime, cover the bottom of an 9x13 baking pan with phyllo dough, reserving the rest for the topping.
    5. Bake 10 minutes or until golden brown and puffed up.
    6. Top with peach mixture.
    7. Slice remaining dough into one inch ribbons and arrange them on top of the peach mixture, or just cover the mixture with a whole sheet of phyllo.
    8. Brush on butter.
    9. Bake for 30 minutes, or until top phyllo dough is golden brown.
