Perfectly Creamy Cauliflower Soup
This doesn't take a lot of time to prepare, and I think it'sdelicious. Ingredients
- 2 tbl butter
- 1 tbl olive oil or peanut oil
- 1 medium onion coarsely chopped
- 6-8 scallions or green onions
- 1 clove (or more) garlic
- 2 stalks chopped celery
- 2 medium cauliflowers (or 1 large cauliflower) cored and coarsely chopped
- 1/2 tsp salt
- 1/2 tsp dried thyme
- 1 tsp dried basil
- 1 tsp dried savory or majoram
- 4-6 cups chicken broth or stock (or 6 cups water)
- 2 tbl white miso
- 1/8 tsp ground nutmeg (optional)
- 6 cups water
Directions
- Melt butter in heavy soup kettle. Add oil.
- Add onion, scallions, and garlic.
- Add celery and cauliflower.
- Add seasonings.
- Mix well and cook uncovered for several minutes, stirring frequently.
- Add chicken broth (water) and miso.
- Bring to boil.
- Simmer covered over medium heat for about15 minutes or until cauliflower is tender.
- Purée until smooth and creamy.
