• Perfect Parmesan Potatoes

    • 6-10 red skinned new potatoes
    • 1 stick butter
    • 1 lg. can or possibly pkg. green beans, liquid removed
    • Salt
    • Pepper
    • Parsley flakes
    • Chopped dry onion
    • 1 lg. container lowfat sour cream
    • Parmesan cheese


    1. Wash and scrub potatoes (don't peel). Boil in a large pan of water till tender and then drain. Cut potatoes into large sections. Place half of the potatoes in a crock pot. Season with salt, pepper, parsley, onion and Parmesan. Cut 1/2 stick of butter into pats and place on top of potatoes.
    2. Pour green beans on top of potatoes. Season lightly with salt and pepper. Put the rest of the potatoes on top and season again with all seasonings. Add in the other 1/2 stick butter cut into pats and Parmesan cheese.
    3. Spread the lowfat sour cream proportionately on top. Lightly shake Parmesan on top till it covers the lowfat sour cream. Heat in crock pot on High for 1 1/2 to 2 hrs or possibly till very warm. Stir after about 1 hour.
