Penne Puttanesca

- 1 lb penne pasta
- 1/3 cup olive oil
- 3 cloves garlic, crushed
- 1 tsp crushed red pepper flakes
- 5 med tomatoes (2lbs) chopped or 28oz can plum tomatoes
- 7oz pitted kalamata olives, coarsely chopped
- 8 drained anchovy fillets, chopped coarsely (opt)
- 1/3 cup drained capers, rinsed
- 1/3 cup chopped fresh flat leaf parsley
- 3 tbsp finely shredded fresh basil
Directions
- Cook pasta in lg pot of boiling water, uncovered, til al dente
- Heat oil in lg skillet, cook garlic, stirring 1 min. Add crushed red pepper and tomatoes, cook 5mins, stirring.
- Add remaining ingredients cook stirring occasionally about 5 mins or till sauce thickens slightly.
- Add drained pasta to the skillet toss gently to combine.
