Pecan Banana Muffins
These Pecan Banana Muffins are an easy and delicious breakfast or brunch Ingredients
- 3 Ripe Bananas, mashed
- 1 Cup Chopped Pecans
- 1 Cup Brown Sugar
- 1/2 Cup Butter
- 1 Egg
- 1 Tsp. Vanilla
- 1/8 Tsp. Ground Cloves
- 1/4 Tsp. Ground Ginger
- 2 Cups All Purpose Flour
- 1 Tsp. Baking Soda
Directions
- Heat oven to 350 degrees.
- Crush bananas and set aside
- Beat together brown sugar and butter. Beat in egg, vanilla, cloves and ginger. Add crushed banana and mix well.
- Add flour and baking soda and beat well. Stir in crushed pecans.
- Grease muffin tins or use paper muffin liners. Fill to the top.
- Bake at 350 degrees for 18 to 20 minutes or until toothpick inserted in center comes out clean.
- This recipe makes 12 muffins.
